I'm currently wrapping up college, have been building credit for around a year on one beginner card and have a pretty decent score (between 710-760 depending on the provider). I have a lot of expenses and international travel coming up and would like to take advantage of one of these large sign up bonuses. I'm probably not ready for a card in the AMEX Platinum/CSR annual fee range, but have been looking pretty closely at Chase Sapphire Preferred, Citi ThankYou Premier and AMEX Gold but am slightly worried about being approved. I would love some thoughts and recommendations on these cards and others in the same neighborhood!

I hear the Amex cards are easier so maybe try that. Also, if you dont already have them, try to get the Chase Freedom/Freedom Unlimited, Amex Everyday or Citi TY Preferred - those all have no annual fee and are great beginners cards. Once you've had those for a few months, you shouldnt have any problem applying for the more premium versions with annual fees. You'd be able to combine your points within each card family as well!
