    Which is a better product?
Which would give me a better chance to upgrade?

    United Airlines
    All Nippon Airways
    or
    Singapore Airlines

    (lax to tokyo)

Of the 3, SQ is probably the best product, followed by NH then UA. Are you looking for paid upgrades or upgrade with miles?

All 3 airlines have their own rules for upgrades but generally, you need to have booked into a specific fare class. Links to their rules are below:

UA also requires miles+cash for the upgrade, if space is available
    https://www.united.com/web/en-US/apps/mileageplus/awards/travel/awardTravel.aspx

SQ has a premium economy cabin on some planes and requires a different number of miles: https://www.singaporeair.com/saar5/pdf/ppsclub_krisflyer/charts/SQMI_OneWayUpgradeCharts.pdf

    NH is distance based http://www.ana.co.jp/wws/us/e/asw_common/amc/reference/tukau/upgrade.html
